Vibrant summer vegetable medley with a zesty marinade.
Ingredients:
  • 2 cups fresh green beans, trimmed and halved
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced mushrooms
  • 0.5 cup cherry tomatoes
  • 1 (6 ounce) can black olives, drained
  • 0.5 cup red wine vinegar
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon monosodium glutamate (MSG)
  • 1 tablespoon garlic salt
  • 1 tablespoon dried dill weed
  • 1.5 cups extra virgin olive oil
Instructions:
  • Begin by boiling a pot of salted water. Add green beans and cook for 1 to 2 minutes until tender. Drain and rinse with cold water until cool. Combine with broccoli, cauliflower, mushrooms, tomatoes, and olives in a bowl, then set aside.
  • In a bowl, combine vinegar, salt, pepper, monosodium glutamate, garlic salt, and dill. While whisking, slowly pour in the olive oil to make a flavorful dressing. Drizzle the dressing over the vegetables and mix well. Chill in the fridge for a minimum of 2 hours before serving.
