Marinate raw veggies in olive oil, soy sauce, lemon juice, and garlic for succulent grilled vegetables.
Ingredients:
  • 16 large fresh button mushrooms
  • 16 cherry tomatoes
  • 0.5 cup thickly sliced zucchini
  • 0.5 cup sliced red bell pepper
  • 0.5 cup sliced yellow bell pepper
  • 0.5 cup sliced yellow squash
  • 0.5 cup sliced red onion
  • 0.5 cup olive oil
  • 0.5 cup soy sauce
  • 0.5 cup lemon juice
  • 0.5 clove garlic, crushed
Instructions:
  • Combine mushrooms, tomatoes, zucchini, bell peppers, squash, and red onion in a spacious bowl.
  • Whisk olive oil, soy sauce, lemon juice, and garlic in a small bowl. Drizzle over vegetables and toss well to coat. Cover and refrigerate to marinate for 30 minutes.
  • Prepare the grill by preheating it to medium heat and lightly oiling the grates.
  • Grill the marinated vegetables until tender, for about 12 to 15 minutes, on the preheated grill.
