Creamy sun-dried tomato chicken - an irresistible, quick, and easy dish that will capture your heart!
Ingredients:
  • 1.5 pounds skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground thyme
  • 0.5 cup chicken broth, divided
  • 0.5 pound bacon
  • 1 (16 ounce) package angel hair pasta
  • 1 tablespoon all-purpose flour
  • 0.5 cup freshly shaved Parmesan cheese
  • 0.25 cup whipping cream
  • 0.25 cup chopped sun-dried tomatoes
  • 1 pinch red pepper flakes
  • salt to taste
Instructions:
  • Prepare your ingredients and preheat the oven to 350 degrees F (175 degrees C).
  • Lay chicken breasts down and butterfly them by slicing horizontally through the middle without cutting all the way through, then open them up like a book.
  • In a large oven-safe skillet over medium-high heat, melt butter. Stir in garlic, oregano, and thyme. Sauté for about 30 seconds until fragrant.
  • Sear chicken until beautifully golden on both sides, ensuring it is not fully cooked yet, about 3 to 4 minutes per side.
  • Drizzle 1/4 cup chicken broth into the skillet and roast in the preheated oven until chicken is cooked through and juices are clear, approximately 15 minutes.
  • Place bacon in a large skillet over medium-high heat. Cook and turn occasionally until evenly browned for about 10 minutes. Drain the bacon on paper towels and let cool for about 5 minutes before chopping.
  • Simultaneously, bring a generously salted large pot of water to a boil. Cook angel hair pasta until al dente, about 4 to 5 minutes, stirring occasionally. Drain and keep warm.
  • Take the skillet out of the oven and carefully move the chicken to a plate, keeping the juices in the skillet. Keep the chicken warm and place the skillet on the stovetop.
  • Sprinkle flour into the skillet over medium heat. Pour in the rest of the chicken broth, Parmesan cheese, and whipping cream. Continuously whisk until everything comes together smoothly.
  • Combine sun-dried tomatoes, red pepper flakes, and a pinch of salt in the skillet with bacon and chicken.
  • Top piping hot pasta with this delectable creation.
