Martina McBride's Kansas-inspired creamy mashed potatoes are a cozy staple.
Ingredients:
  • 1.5 pounds russet potatoes, peeled and cut into 2-inch pieces
  • 1 teaspoon kosher salt, or to taste
  • 0.25 cup Country Crock® Spread
  • 4 ounces cream cheese, softened
  • 0.25 cup sour cream
  • 0.25 cup half-and-half, warmed
  • 0.75 teaspoon chopped fresh thyme
  • 1 tablespoon Country Crock® Spread
Instructions:
  • In a large saucepan, cover the potatoes with cold water by at least 1 inch. Add salt and bring to a boil. Simmer partially covered until very tender, about 12 to 15 minutes. Drain and return to the pan.
  • Mash the potatoes using a potato masher or a handheld mixer on low speed. Slowly mix in Country Crock® Spread until well combined. Add the cream cheese and sour cream gradually, mixing thoroughly after each addition.
  • Slowly incorporate the warm half-and-half, 2 tablespoons at a time, until the potatoes are fluffy and light (you may not use all the half-and-half). Add thyme, season with salt and pepper, and finish with a tablespoon of Country Crock® Spread on top.
