Pikelets topped with creamy mascarpone, fresh blueberries, and sweet honey.
Ingredients:
  • 150.00 gm self-raising flour
  • pinch of bicarbonate of soda
  • 193.13 gm milk
  • 20g butter, melted
  • 127.50 gm mascarpone cheese, softened (see note)
  • 250g fresh blueberries or frozen blueberries
  • 57.20 gm honey, to serve
Instructions:
  • Sift flour into a bowl, then stir in sugar and bicarbonate of soda until well combined.
  • Combine milk and egg in a jug until well mixed. Create a hole in the center of the flour mixture and pour in the milk mixture. Gently stir to form a smooth batter.
  • Preheat a non-stick pan over medium heat and lightly coat with butter. Spoon small amounts of batter onto the pan and cook until small bubbles appear, then flip and cook until done. Transfer to a wire rack to cool.
  • Arrange the pikelets on plates and generously top each with a dollop of mascarpone, a handful of fresh blueberries, and a generous drizzle of honey. Serve while warm.
