Creamy whipped potatoes with luxurious mascarpone cheese - a sumptuous side dish for any meal.
Ingredients:
  • 3 lb Yukon Gold potatoes, peeled, cut into cubes
  • 1 cup milk
  • 2 tablespoons butter
  • 1/2 cup mascarpone cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh chives
Instructions:
  • Place potatoes in a large saucepan and cover with water. Bring to a boil, then simmer covered for about 15 minutes until potatoes are fork-tender. Drain and return to the saucepan.
  • In a small saucepan, gently warm the milk and butter until the butter is melted and the milk is steaming.
  • Slowly pour the hot milk into the potatoes while using a handheld mixer until well combined. Mix in the cheese, salt, and pepper until the potatoes are creamy and fluffy. Transfer to a serving bowl and garnish with chives.
