Pomegranate-Poached Pears with Orange-Ginger Mascarpone Whipped Cream

Ingredients:
  • 2 Bosc pears, peeled, cored and quartered
  • 1 cup pomegranate juice
  • 5 tablespoons granulated sugar
  • 2 oranges
  • 1/4 cup mascarpone cheese, softened
  • 1/2 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon grated gingerroot
Instructions:
  • In a 2-quart saucepan, place the quartered pears and pour in pomegranate juice. Sprinkle granulated sugar over the pears (if needed, add more juice and sugar until the pears are covered). Bring to a boil, then partially cover with a lid. Lower the heat and simmer for about 20 minutes, or until the pears are tender when pierced with a fork.
  • Grate the peel from the oranges and set it aside. In a large bowl, add mascarpone cheese. Cut the oranges in half and squeeze the juice over the mascarpone in the bowl. Use an electric hand mixer on low speed to beat until well blended. Add the grated orange peel, whipping cream, powdered sugar, and gingerroot. Continue to beat on low speed until combined. Increase the speed to medium and beat until soft peaks start to form.
  • Arrange 2 warm pear quarters on each dessert plate and generously spoon whipped cream over them.
