Pomegranate Poached Pears with Yogurt Sauce

Impress your guests with zesty lemon and vibrant pomegranate in these elegant poached pears!
Ingredients:
  • 6 firm ripe Bosc pears
  • 2 cups pomegranate juice
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 cinnamon stick
  • 1 container (6 oz) Liberté® Méditerranée lemon yogurt
Instructions:
  • Peel pears, keeping stems on. Slice the bottom of each pear for stability. In a medium saucepan, combine pomegranate juice, water, sugar, and cinnamon stick. Bring to a simmer until sugar dissolves. Add pears and cook covered for 15-20 minutes, basting occasionally, until pears are tender.
  • Take out the pears from the syrup and simmer the syrup over medium-high heat for 15 to 20 minutes, stirring occasionally, until it thickens.
  • On each plate, elegantly dollop 1 1/2 tablespoons of yogurt. Artfully drizzle 2 teaspoons of syrup over the yogurt. Garnish with sliced pears.
