Ingredients:
  • 2 tablespoons olive oil
  • 1 (16 ounce) package frozen peas
  • 1 bunch green onions, chopped
  • 1 bunch fresh mint leaves
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, heat oil until shimmering. Add frozen peas, green onions, and mint; cook and stir until peas are hot, tender, and vibrant green, about 7 to 10 minutes.
  • Transfer the mixture to a bowl and gently mash the peas until they are well crushed but still a bit chunky. Mix in butter, brown sugar, salt, and pepper, stirring until the butter is melted and the sugar is dissolved.
