Indulge in guilt-free Massaman curry duck tray bake - tender duck legs, spicy veggies, and cooling yogurt.
Ingredients:
  • 56.00 gm massaman curry paste
  • 125ml (1/2 cup) coconut cream
  • 450g kipfler potatoes, scrubbed, halved lengthways
  • 1/2 small cauliflower, cut into florets
  • 1 red onion, cut into wedges
  • 2 small zucchini, quartered lengthways
  • 2 x 450g pkts Roast Duck Legs
  • Fresh coriander sprigs, to serve
  • 2 long fresh red chillies, sliced
  • Greek-style yoghurt, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan forced) and prepare a large roasting pan by lining it with baking paper.
  • Mix the curry paste and coconut cream in a large bowl. Add the potato, cauliflower, onion, and zucchini, tossing to coat evenly. Spread the vegetables on the prepared pan and generously spray with oil. Bake for 40 minutes.
  • Toss the duck legs in the remaining coconut mixture, then place them in the roasting pan with the vegetables. Bake for 20 more minutes until the vegetables are tender and the duck is golden and browned. Finish by sprinkling with coriander and chili, and serve with yogurt.
