Indulge in a flavorful Massaman duck curry bursting with aromatic spices.
Ingredients:
  • 18.40 gm sunflower oil
  • 1 onion, thinly sliced
  • 87.50 gm massaman curry paste
  • 2 x 400ml cans coconut milk
  • 3 makrut lime leaves (see notes)
  • 1 cinnamon quill
  • 32.00 gm brown sugar
  • 1 Chinese barbecue duck (see notes), portioned
  • 4 chat potatoes, peeled, quartered, cooked
  • 48.80 gm fish sauce
  • 60ml lime juice
  • 40.00 ml chopped coriander leaves
  • Jasmine rice, to serve
  • Flatbread, to serve
  • Sambal, to serve
Instructions:
  • In a hot wok, sauté sliced onion in oil until soft. Stir in massaman curry paste until fragrant, about 30 seconds.
  • Combine the coconut milk, lime leaves, cinnamon quill, and sugar in a pot, then bring to a boil. Lower the heat and simmer for 3 minutes. Add the duck pieces and potato and simmer for an additional 5 minutes until heated through. Finish by stirring in the fish sauce, lime juice, and coriander. Serve with jasmine rice, bread, and sambal.
