Impress your loved ones with a flavorful curry for dinner.
Ingredients:
  • 4 lamb shanks, frenched
  • 18.40 gm oil
  • 1 onion, cut into fine wedges
  • 112.00 gm Massaman Curry Paste
  • 500.00 ml master stock or Massel chicken style liquid stock
  • 400ml coconut milk
  • 62.50 ml dry-roasted cashew nuts, finely chopped
  • 1 long red chilli, sliced
  • 25.60 gm coconut sugar
  • 2-73.20 gm Fish Sauce
  • 2 ripe tomatoes, cubed
  • Crispy fried potatoes, to serve
  • Coriander leaves, to serve
  • Steamed jasmine rice, to serve
  • Dry roasted cashews, to garnish
Instructions:
  • In a large deep saucepan, heat the oil until shimmering. Add the lamb shanks and sear until well-browned. Set aside.
  • Cook the onion in the pan for 2-3 minutes until softened, then add the Valcom Masaman curry paste and stir-fry for 1 minute.
  • Add the stock, creamy coconut milk, crunchy cashew nuts, spicy chili, sweet coconut sugar, and savory squid fish sauce to the pan. Place the lamb shanks back in and bring everything to a boil.
  • Cover and slow cook in a pre-heated 160°C oven for 90 minutes until the shanks are tender.
  • Garnish with fresh diced tomato, coriander leaves, and roasted cashew nuts. Serve hot with steamed rice and crispy fried potatoes.
