Whip up a quick and delicious homemade meatball minestrone soup with just 5 simple ingredients. Perfect for a comforting meal that kids will devour in under 25 minutes.
Ingredients:
  • 18.20 gm olive oil
  • 560g pkt Classic Pork & Beef Meatballs
  • 500g pkt Minestrone Soup Kit
  • 400g can diced tomatoes
  • 25g parmesan
Instructions:
  • In a large saucepan, heat oil over high heat. Add meatballs and cook for 5 minutes, turning occasionally until they are browned all over. Remove meatballs and place them on a plate.
  • Sauté the vegetables from the soup kit in a pan until just tender, about 5 minutes. Pour in the stock sachet from the soup kit, along with the tomato and 4 cups (1L) of water. Bring to a boil, then lower the heat and add the meatballs back to the pan. Simmer gently for 10 minutes or until the meatballs are cooked through and the veggies are tender.
  • Ladle soup into individual bowls and generously sprinkle with freshly grated Parmesan cheese.
