Delicious mini meatball minestrone: a nutritious and easy dish!
Ingredients:
  • 250g extra-lean beef mince
  • 125.00 ml chopped fresh flat-leaf parsley leaves
  • 200g onion
  • 150g capsicum
  • 150g celery
  • 400g can no-added-salt chopped tomatoes
  • 382.50 gm salt reduced chicken style liquid stock
  • 110g risoni
  • 400g can butter beans, drained, rinsed
  • 60g pea
  • 4 slices toasted Burgen oatbran and honey bread, to serve
Instructions:
  • In a bowl, combine mince, parsley, and half of the garlic. Roll mixture into 20 balls using 1 heaped teaspoon each. Brown meatballs in a large frying pan with hot oil over medium-high heat for 5 to 7 minutes. Transfer to a plate.
  • Saute onion, capsicum, celery, and remaining garlic until onion is soft. Pour in tomato, stock, and 1 1/2 cups of cold water, then bring to a boil. Toss in pasta and meatballs, simmer until pasta is cooked. Lastly, mix in beans, peas, and remaining parsley. Serve with toast.
