Mini meatball and tomato

Elevate pasta and meatballs with homemade tomato sauce.
Ingredients:
  • 1 medium brown onion, finely chopped
  • 44.40 gm tomato paste
  • 2 x 400g cans diced tomatoes
  • 62.50 ml finely chopped fresh basil leaves
  • 250g pork mince
  • 250g veal mince
  • 1 small zucchini, grated
  • 165.00 ml finely grated parmesan
  • Fettuccine, cooked, to serve
Instructions:
  • In a saucepan over medium heat, sauté onion and garlic in oil until onion is soft, about 5 minutes. Stir occasionally.
  • Stir in tomato paste and cook for 1 minute. Pour in tomatoes and bring to a boil, then reduce heat to low. Simmer for 10 to 15 minutes until sauce thickens slightly. Add fresh basil and stir to combine.
  • In a bowl, mix together the mince, zucchini, half of the parmesan, salt, and pepper until well combined. Roll the mixture into 40 balls using heaped teaspoons.
  • Simmer meatballs in the sauce for the last 10 minutes until thickened and cooked through. Serve over fettuccine and sprinkle with remaining parmesan.
