Meatballs in lettuce cups

Ingredients:
  • 250g beef mince
  • 1 small brown onion, coarsely grated
  • 22.20 gm tomato paste
  • 35g breadcrumbs
  • 40.00 ml chopped chives
  • Mignonette lettuce leaves
  • 1 Lebanese cucumber, thinly sliced lengthways
  • 12 cherry tomatoes, quartered
  • Hummus, yoghurt, sweet chilli sauce or tomato sauce, to serve
Instructions:
  • In a medium bowl, mix together the beef, onion, tomato paste, breadcrumbs, and chives. Season with salt and pepper. Roll the beef mixture into tablespoon-sized balls and place them on a plate. Cover the plate with plastic wrap and refrigerate for 30 minutes to allow the flavors to meld.
  • To achieve a perfect sear, preheat a spacious non-stick pan over high heat. Place the meatballs in the pan and cook for 6-8 minutes, turning occasionally, until evenly golden and fully cooked. Once done, set aside to cool.
  • In an airtight container, layer lettuce, cucumber, tomatoes, and meatballs. Serve alongside hummus, yogurt, sweet chili, or tomato sauce.
