Sticky plum meatballs in lettuce cups - a delicious Asian-inspired family favorite.
Ingredients:
  • 500g No Added Hormones Beef Mince
  • 20.00 ml finely grated ginger
  • 227g can sliced water chestnuts, finely chopped
  • 1 Free Range Egg, lightly whisked
  • 35g breadcrumbs
  • 3 spring onions, thinly sliced
  • 18.20 gm olive oil
  • 125ml plum sauce
  • 150g vermicelli rice noodles
  • 2 baby cos lettuce, leaves separated
Instructions:
  • Combine the mince, ginger, water chestnut, egg, breadcrumbs, and spring onion in a large bowl, then mix thoroughly with your hands. Season the mixture and roll into 1-tbs sized balls.
  • Start by heating the oil in a large frying pan over medium heat. Then, add the meatballs and cook them, turning occasionally, for 5 minutes. Next, pour in the plum sauce and 1 1/4 cups (310ml) water. Continue cooking and turning occasionally for 4 minutes until the sauce thickens slightly and the meatballs are cooked through.
  • Place the noodles in a heatproof bowl and cover with boiling water. Let them sit for 5 minutes until tender. Then, rinse well under cold water and drain.
  • Arrange the lettuce leaves on serving plates. Pile on the noodles and meatballs. Garnish with sliced spring onion, red chilli, and lime wedges. Serve and enjoy!
