Meatless Mincemeat Pie

Combine mincemeat with walnuts, apples, brown sugar, lemon juice, and brandy. Chill, fill crust, top with lattice, bake for a delectable meatless mincemeat pie.
Ingredients:
  • 1 (18 ounce) jar prepared mincemeat pie filling
  • 1.5 cups chopped walnuts
  • 2 apple - peeled, cored, and chopped
  • 0.5 cup packed brown sugar
  • 0.25 cup rum
  • 1 tablespoon lemon juice
  • 1 recipe pastry for a 9 inch double crust pie
Instructions:
  • In a bowl, mix together mincemeat, walnuts, apples, brown sugar, rum, and lemon juice until well combined. Refrigerate covered overnight.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and position a rack at the lowest level.
  • Allow the mincemeat filling to reach room temperature by removing it from the refrigerator.
  • Prepare the pie crusts. Use half of the dough to line a 9-inch pie plate and save the rest for the top crust.
  • Mix the mincemeat filling thoroughly before transferring it into the pie plate. Cover the filling with the remaining pie crust and decorate with slits or a lattice pattern. Seal the edges by crimping them together.
  • Bake on the bottom rack in the preheated oven until perfectly golden brown, approximately 40 minutes.
