Meatloaf with tomato and pancetta sauce

Create a patriotic meatloaf inspired by American diners.
Ingredients:
  • 125ml (1/2 cup) milk
  • 150g (1/4 loaf) day-old sourdough bread, crusts removed, torn
  • 1 large carrot, roughly chopped
  • 2 small onions, roughly chopped
  • 4 cloves garlic, halved
  • 60ml (1/4 cup) olive oil
  • 2.50 gm ground cumin
  • 500g beef mince
  • 500g pork mince
  • 70g (1/4 cup) tomato sauce
  • 24.40 gm Worcestershire sauce
  • 2 eggs, lightly beaten
  • 50g butter
  • 36.40 gm extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 100g pancetta, finely chopped
  • 400g btl Mutti Tomato Passata
  • 400g can Italian diced tomatoes
  • 20.00 ml red wine vinegar
  • 5 bay leaves (optional)
Instructions:
  • In a bowl, combine milk and bread, then gently mix the ingredients by hand until well combined.
  • Finely chop carrots, onions, and garlic in a food processor. Heat oil in a frying pan over high heat. Add the chopped vegetables and cumin. Cook on high heat, stirring often, for 10 minutes until tender. Allow to cool.
  • Preheat your oven to 200C. Combine bread mixture, vegetable mixture, and remaining ingredients in a large bowl. Season with pepper, then mix everything thoroughly using your hands.
  • Prepare a 12cm x 25cm 1.25L loaf pan by greasing and lining the base with baking paper. Fill the pan with the meat mixture and bake for 50 minutes, or until nearly fully cooked.
  • Start by heating butter and oil in a large pan over medium heat. Add garlic, chili flakes, and pancetta, and cook for 5 minutes until golden. Stir in passata, diced tomatoes, vinegar, and 1 teaspoon salt, then bring to a simmer. Let it cook for 20 minutes until slightly thickened, stirring occasionally.
  • Prepare the oven tray by lining it with baking paper. Gently flip the meatloaf out onto the tray after running a knife around its edges. Brush the top with sauce and bake for 10 minutes. Brush the top with more sauce, add bay leaves if desired, and bake for an additional 10 minutes or until the meatloaf is fully cooked.
  • Warm the sauce in a pan over medium heat. Slice the meatloaf and divide among plates. Spoon the warm sauce over the meatloaf before serving.
