Bacon-Spinach Turkey Meatloaf with Tomato Jam

Savor turkey loaf with spinach and bacon, topped with Muir Glen™ tomato jam for a flavorful dinner delight.
Ingredients:
  • 1 large onion, chopped (1 cup)
  • 4 cloves garlic, finely chopped
  • 1 tablespoon Muir Glen™ organic tomato paste
  • 1 lb lean ground turkey
  • 1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
  • 1 slice uncooked bacon, chopped
  • 1/4 cup fat-free (skim) milk
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1 egg white
  • 2 tablespoons packed brown sugar
  • 1 tablespoon lemon juice
  • 1 can (28 oz) Muir Glen™ organic whole peeled tomatoes
  • 2 teaspoons grated lemon peel
  • 1/4 teaspoon crushed red pepper flakes
Instructions:
  • 1. Preheat the oven to 350°F. Set aside 1/2 cup of onion and half of the garlic for the jam. 2. Spray an 8-inch skillet with cooking spray and heat over medium-high heat. 3. Add the rest of the onion to the skillet and cook for 3 minutes until tender, stirring frequently. 4. Lower the heat to low and mix in the tomato paste. Cook for 2 minutes, stirring occasionally. 5. Remove the skillet from heat and stir in the remaining garlic.
  • Prepare the broiler pan with rack by generously spraying it with cooking spray. Combine the onion mixture with all other meatloaf ingredients in a large bowl. Shape the mixture into an 8 x 5-inch loaf on the prepared rack in the broiler pan. Bake for 1 hour or until a meat thermometer inserted into the center of the loaf reads 160°F. Allow the meatloaf to rest for 10 minutes before serving.
  • While that's happening, prepare the jam. Coat a 10-inch skillet with cooking spray and heat it over medium-high heat. Add the reserved onion and garlic to the skillet, cooking for about 3 minutes until they become golden, stirring frequently. Introduce the brown sugar and lemon juice, incorporating them to deglaze the skillet. Then, mix in the rest of the jam ingredients, breaking up the tomatoes with a spoon. Bring the mixture to a boil and then lower the heat to simmer uncovered for 20 minutes until it starts to thicken. Finally, strain the jam through a fine strainer, discarding the liquid.
  • Serve by slicing the loaf into 8 pieces and generously topping each slice with warm jam.
