Campanelle pasta with turkey bacon, spinach, tomatoes, and cheese - a simple and delicious weeknight meal.
Ingredients:
  • 1 (16 ounce) package penne pasta, dry
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium ripe tomato, chopped, or more to taste
  • 1 (8 ounce) package fresh spinach
  • 6 strips turkey bacon
  • 0.25 cup crumbled Gorgonzola cheese, or to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook pasta until al dente, about 11 minutes. Drain.
  • As the pasta boils, warm up oil in a skillet over medium-high heat. Sauté onion and garlic until soft, around 5 minutes. Add tomatoes and cook for 5 minutes. Gently mix in spinach and season with salt and pepper. Let the mixture simmer on low heat for 15 minutes.
  • In a large skillet over medium-high heat, cook the turkey bacon until evenly browned, turning occasionally, for 7 to 10 minutes. Drain the bacon on paper towels, crumble it, and transfer it to the tomato mixture.
  • Add the Gorgonzola cheese to the drained pasta, then pour in the tomato mixture.
