Mouthwatering Mediterranean chickpea bowl with creamy tahini sauce, featuring spiced chickpeas, fresh greens, cherry tomatoes, cucumbers, red onions, and nutty brown rice. Perfect for meal prep!
Ingredients:
  • For the tahini dressing:
  • 1/4 cup tahini (at room temperature)
  • 1/4 cup warm water
  • Juice 1/2 to 1 lemon (1 to 2 tablespoons)
  • 1 teaspoon honey, agave, or maple syrup
  • 1 clove garlic, finely minced
  • 1/4 cup finely minced parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • For the chickpeas:
  • 1 16-ounce can chickpeas (or 2 cups homemade chickpeas )
  • 1/2 tablespoon paprika (either sweet or hot)
  • 1/2 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon olive oil, divided
  • 1 clove garlic, minced
  • 1 teaspoon finely minced fresh chili (optional)
  • 1/2 cup finely chopped fresh herbs (I like the combination of parsley, mint, and cilantro)
  • For the bowls:
  • 6 cups baby spinach
  • 2 cups cooked brown rice
  • 1 pint cherry or grape tomatoes, halved
  • 1 English cucumber, diced
  • 1/4 red onion, finely diced (about 2 tablespoons)
  • Fresh mint leaves
Instructions:
  • Prepare the tahini dressing by whisking tahini with warm water, lemon juice, honey, minced garlic, parsley, salt, and pepper in a small bowl. Adjust seasoning by tasting and adding salt if needed. To balance flavors, sprinkle more lemon juice one teaspoon at a time if desired. For a thinner consistency, incorporate water one tablespoon at a time. Store dressing in the fridge for several days, and gently warm before use if needed.
  • Drain and rinse chickpeas well. Pat dry with a towel or air dry for 10 minutes. Toss chickpeas in a bowl with paprika, cumin, coriander, salt, pepper, and 1/2 tbsp olive oil until coated. Heat a skillet over medium-high heat, add remaining 1/2 tbsp olive oil, then add chickpeas. Stir continuously for 3-5 minutes until warmed through. Turn off heat, add garlic and chili, if desired. Finish with fresh herbs before serving warm. Optional to enjoy cold if made ahead.
  • Create a beautiful bowl presentation by distributing the spinach evenly among four bowls. Add 1/2 cup of brown rice to each bowl, along with 1/2 cup of warm chickpeas, a quarter of the tomatoes, cucumber, and red onion. Finish off by drizzling with tahini dressing and garnishing with fresh mint leaves.
