Mediterranean chickpea salad recipe

Vibrant Mediterranean salad with zesty dressing, perfect for BBQs or as a vegetarian main dish with crusty bread.
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 200g grape tomatoes, halved
  • 100g feta, crumbled
  • 40g (1/4 cup) pitted Sicilian olives, quartered
  • 1 red onion, finely chopped
  • 1 red capsicum, deseeded, coarsely chopped
  • 1 Lebanese cucumber, quartered lengthways, sliced
  • ½ cup chopped fresh continental parsley leaves
  • ½ cup chopped fresh basil leave
  • 1 garlic clove
  • 80ml (1/3 cup) extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 20.00 ml white wine vinegar
  • 5.90 gm Dijon mustard
Instructions:
  • Prepare the dressing by combining garlic, olive oil, lemon juice, vinegar, and mustard in a screw-top jar. Shake well and let sit for 10 minutes to enhance the flavors.
  • In a large bowl, mix the chickpeas, tomato, feta, olives, onion, bell pepper, cucumber, parsley, and basil. Remove the garlic clove from the dressing, pour the dressing over the salad, season to taste, toss well, and serve right away.
