Crunchy chickpea salad with Mediterranean spices, feta, and yogurt dressing - the perfect spring side dish for any protein!
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 2.50 gm ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp turmeric
  • 350g Butter Leaf Blend
  • 6 radish, trimmed, cut into wedges
  • 1/2 red onion, thinly sliced
  • 1 avocado, stoned, peeled, sliced
  • 100g fetta, crumbled
  • 95g yoghurt
  • 42.00 gm lime juice
  • 40.00 ml coarsely chopped chives
Instructions:
  • Preheat your oven to 200°C. In a small baking tray, mix chickpeas with oil, cumin, garlic powder, and turmeric. Toss well to coat. Roast for 20 minutes, or until the chickpeas are beautifully golden and crispy. Allow them to cool before enjoying.
  • Place salad leaves, radish, onion, avocado, and feta on a platter. Top with chickpea mixture. In a bowl, mix yogurt, lime juice, and half of the chives. Drizzle over the salad. Garnish with remaining chives and season before serving.
