Mediterranean flatbread sandwich filled with veggies, hummus, and pilaf. Ready in just 20 minutes, a delicious and wholesome meal!
Ingredients:
  • 1 package (8.5 oz) seven-grain pilaf
  • 1 cup chopped English (seedless) cucumber
  • 1 cup chopped seeded tomato (1 medium)
  • 1/4 cup crumbled feta cheese (1 oz)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon freshly ground pepper
  • 1 container (7 oz) plain hummus
  • 3 whole-grain white flatbread wraps (2.8 oz each)
Instructions:
  • Follow the instructions on the pilaf package and let it cool. In a medium bowl, combine cucumber, tomato, cheese, lemon juice, oil, and pepper. Gently mix in the cooled pilaf.
  • Spread a generous layer of creamy hummus on one side of each flatbread wrap. Top with a flavorful pilaf mixture, then fold the wrap over the filling. Cut each sandwich in half for a visually appealing presentation before serving.
