Delicious flatbread pizzas topped with Mediterranean veggies, hummus, and feta - perfect for parties or a light dinner!
Ingredients:
  • 2 multigrain and flax flatbreads (such as Flatout®)
  • 0.5 cup hummus
  • 1 cup crumbled feta cheese
  • 0.25 cup slice red bell pepper
  • 0.25 cup sliced green bell pepper
  • 0.25 cup thinly sliced onion
  • 1 cup shredded Colby-Monterey Jack cheese
  • 1 pinch garlic salt, or to taste
  • 1 pinch ground black pepper to taste
  • 1 sprig fresh dill, chopped, or to taste
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Arrange the flatbreads on a broiling pan.
  • Preheat the oven to 425 degrees F (220 degrees C, then broil for 3 to 5 minutes.
  • Spread a thin layer of hummus on pre-baked flatbreads to prevent sogginess. Sprinkle feta cheese evenly. Arrange bell peppers and onion on top. Add Colby-Jack cheese. Season with garlic salt, pepper, and dill.
  • Bake in the oven until the cheese is bubbling and the edges are golden brown, approximately 7 to 10 minutes.
