Greek flatbread pizza with zesty Mediterranean spinach salad, olives, feta, and mozzarella on pita bread.
Ingredients:
  • 2 tablespoons lemon juice
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried basil
  • 6 tablespoons olive oil
  • 2 (4 inch) pita bread rounds
  • 2 cups torn fresh spinach
  • 0.25 cup halved grape tomatoes
  • 3 tablespoons chopped pimento-stuffed green olives
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup crumbled feta cheese
Instructions:
  • Preheat your oven to 375°F (190°C) for a perfect bake.
  • Combine tangy lemon juice, aromatic garlic powder, flavorful oregano, and fragrant basil in a medium bowl. Drizzle in olive oil and whisk until the dressing is perfectly blended.
  • Coat pita breads with 1 tablespoon dressing and place on a baking sheet; set aside remaining dressing.
  • In a large bowl, mix together the spinach, tomatoes, and olives. Drizzle the remaining dressing over the vegetables and toss until coated. Spread the spinach mixture evenly over each pita and top with mozzarella and feta cheese.
  • Bake until the cheese is gooey and the pitas are golden and crisp, approximately 8 minutes in the preheated oven.
