Green beans in homemade sauce, topped with crispy onions, served as mini casseroles.
Ingredients:
  • 1 pound fresh green beans, trimmed and cut into 1 1/2-inch pieces
  • 2 tablespoons unsalted butter
  • 1 cup sliced fresh mushrooms
  • 1 medium shallot, thinly sliced
  • 1 clove garlic, minced
  • 1 tablespoon all-purpose flour
  • 0.5 cup chicken stock
  • 1 teaspoon low-sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon dried thyme
  • 0.5 cup half-and-half
  • salt and ground black pepper to taste
  • 1 strip crispy cooked bacon, crumbled
  • 0.5 cup French-fried onions (such as French's®)
Instructions:
  • 1. Boil a large pot of lightly-salted water until it rolls. Add beans and cook for about 5 minutes until just tender. (Feel free to cook them longer if you prefer a softer texture since they won't get much softer during baking.)
  • Drain the beans, rinse under cold water, then soak in a bowl of ice water to cool. Once chilled, drain and keep aside.
  • Preheat oven to 350°F (175°C) and generously coat 4 ramekins with cooking spray.
  • Heat butter in a skillet until melted. Sauté mushrooms and shallot until slightly browned, for 2 to 4 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  • Coat mushrooms evenly with flour. Slowly add chicken stock, soy sauce, Dijon, and thyme, stirring continuously until thickened. Mix in half-and-half, salt, and pepper until fully incorporated. Turn down heat and simmer until sauce thickens and flavors blend, about 3 to 5 minutes.
  • Combine green beans and bacon until thoroughly incorporated. Transfer mixture into the prepared ramekins and generously sprinkle French-fried onions on top.
  • After preheating the oven, bake for 13 to 15 minutes until golden brown. Serve piping hot right away.
