Satisfy your cravings with these delicious and hassle-free sausages.
Ingredients:
  • 4 (about 335g) good-quality lean beef sausages (Peppercorn Gourmet Meats brand)
  • 70g (1/4 cup) low-fat natural yoghurt
  • 10.60 gm fresh lemon juice
  • 20.00 ml finely chopped fresh mint
  • Salt & freshly ground black pepper
  • 1 large baguette (French breadstick), to serve
  • 40.00 ml bought reduced-fat hummus
  • 8 baby cos leaves, washed, dried
  • 45g (1/4 cup) drained semi-dried tomatoes, drained on paper towel
Instructions:
  • Preheat a barbecue grill or chargrill pan over medium heat. Grill sausages, turning occasionally, for 8-10 minutes or until fully cooked. Place on a plate and cover with foil to keep warm.
  • In a small bowl, mix together yogurt, lemon juice, and mint. Season with salt and pepper to taste.
  • Cut the baguette into 4 equal portions, making a lengthways cut in each without cutting all the way through. Spread hummus inside each baguette. Fill with lettuce, sausages, and semi-dried tomatoes. Add yoghurt mixture on top and serve promptly.
