Delicious Mediterranean lamb sub bursting with fresh flavors of tomato and oregano.
Ingredients:
  • 4 x 1cm thick slices baguette, toasted
  • 400g lamb mince
  • 1/2 brown onion, grated
  • 1.80 gm salt
  • 1/2 tsp ground black pepper
  • 4 x 18cm lengths baguette, warmed, split
  • 18.20 gm extra virgin olive oil
  • 1/2 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 20.00 ml dried oregano
  • 4.50 gm white sugar
  • 1/2 lemon, rind finely grated
  • 6 tomatoes, seeded, roughly chopped
  • 127.50 gm chicken stock
Instructions:
  • In a food processor, finely process a sliced baguette to make 1/2 cup breadcrumbs. Combine the breadcrumbs with minced meat, onion, egg, oregano, salt, and pepper in a bowl. Mix thoroughly using your hands until evenly combined. Shape the mixture into 24 balls.
  • Heat oil in a large non-stick pan over high heat. Brown the meatballs in 2 batches for 5 minutes, turning occasionally until cooked through. Transfer to a plate.
  • To create a delicious Fresh Tomato Sauce: Start by heating oil in a pan over medium-high heat. Cook onion, garlic, oregano, sugar, and lemon rind for 2 minutes until the onion turns translucent. Add tomato, stock, and 1/2 cup water, then simmer for 5 minutes until the tomato breaks down. Blend the mixture in a food processor until smooth. Return to the pan and simmer for an additional 3 to 5 minutes until the sauce thickens. Finish by seasoning with salt and pepper to taste.
  • Toss the meatballs in the fresh tomato sauce and simmer for 2 minutes until heated through. Fill the warmed baguettes with the meatballs and sauce. Enjoy immediately.
