Delicious and quick Mediterranean tarts for happy family and guests.
Ingredients:
  • 250g fresh ricotta cheese
  • 2 x 20g frozen spinach cubes, thawed, drained
  • 20.00 ml chopped kalamata olives
  • 62.50 ml chopped red and yellow chargrilled capsicum
  • 2 sheets frozen puff pastry, partially thawed
  • 82.50 ml finely grated parmesan cheese
  • Mixed salad leaves, to serve
Instructions:
  • Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper. Mix together ricotta, egg, spinach, olives, and capsicum in a bowl.
  • Cut each pastry sheet into 4 squares. Place the squares on prepared trays, making sure they are 4cm apart. Using a small knife, create a 2cm border around each square, being careful not to cut through completely. Prick the squares all over with a fork.
  • Spread a generous 2 tablespoons of the creamy ricotta mixture inside each square, then generously sprinkle each one with 2 teaspoons of savory parmesan. Add a dash of freshly ground pepper for a burst of flavor. Bake for 15 minutes, or until the pastry is beautifully golden and puffed. Serve alongside crisp and refreshing salad leaves.
