Delicious Mediterranean rice tarts, ideal for snacking, starters, or lunchboxes - guaranteed to please the whole family.
Ingredients:
  • 300.00 gm medium grain rice
  • 510.00 gm chicken style liquid stock
  • 44.40 gm tomato paste
  • 1/2 small onion finely chopped
  • 1 red capsicum, seeded and finely chopped
  • 1 small zucchini, finely chopped
  • 82.50 ml grated parmesan
  • salt and cracked black pepper
Instructions:
  • Preheat the oven to 190°C. Combine rice, stock, and 1 cup of water in a saucepan over medium heat. Bring to a boil, then simmer for 8-10 minutes, stirring occasionally until the rice is just tender. Add tomato paste, onion, capsicum, and zucchini, and cook for an additional 5 minutes until most of the liquid is absorbed. Remove from heat and stir in parmesan, salt, and pepper.
  • Gently fill the oiled 1/2 cup muffin holes with the rice mixture. Bake for 20 minutes until golden brown and firm. Let cool, then serve immediately or refrigerate for later enjoyment.
