Vibrant Mediterranean rice salad bursting with summer flavors, featuring zucchini, peppers, and endless veggie possibilities.
Ingredients:
  • 4 cups water
  • 2 cups uncooked white rice
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon herb salt
  • 1 tablespoon chopped capers
  • 1 sprig fresh parsley, chopped
  • 0.5 lemon, zested
  • 3 zucchini, peeled and grated
  • 2 carrots, peeled and grated
  • 0.5 yellow bell pepper, cut into cubes
  • 0.5 red bell pepper, cut into cubes
  • 1 lemon, juiced
  • salt to taste
Instructions:
  • 1. In a saucepan, bring water and rice to a boil. Once boiling, lower the heat to medium-low, cover, and simmer for 18 to 20 minutes until the rice is tender and the liquid is absorbed. 2. Remove from heat and cover the cooked rice with cold water before stirring to cool. 3. Drain well and transfer the rice to a bowl. 4. Mix in 1 tablespoon of olive oil and season with herb salt. Enjoy!
  • Combine capers, parsley, and lemon zest in a small bowl, then fold into the rice. Add zucchini, carrots, yellow bell pepper, and red bell pepper. Drizzle with the remaining 1 tablespoon of olive oil, lemon juice, and salt to taste.
