Mediterranean brown rice salad with red bell peppers, raisins, olives, and feta cheese, dressed in balsamic vinaigrette. Perfect for lunch or dinner.
Ingredients:
  • 1.5 cups uncooked brown rice
  • 3 cups water
  • 1 red bell pepper, thinly sliced
  • 1 cup frozen green peas, thawed
  • 0.5 cup raisins
  • 0.25 sweet onion (such as Vidalia®), chopped
  • 0.25 cup chopped Kalamata olives
  • 0.5 cup vegetable oil
  • 0.25 cup balsamic vinegar
  • 1.25 teaspoons Dijon mustard
  • 0.25 cup feta cheese
Instructions:
  • In a saucepan over high heat, bring brown rice and water to a boil. Lower the heat to medium-low, cover, and simmer for 45 to 50 minutes until the rice is tender and the liquid is absorbed.
  • Mix together the vibrant flavors of red bell pepper, peas, sweet raisins, tangy onion, and savory olives in a bowl.
  • Combine vegetable oil, vinegar, and mustard in a separate bowl, whisking until well blended for the balsamic dressing.
  • Combine the brown rice and balsamic dressing with the vegetable mixture, then season generously with salt and black pepper.
  • Sprinkle feta cheese over brown rice and vegetables just before serving.
