Simple stuffed mushrooms with a cheesy filling for a tasty starter.
Ingredients:
  • 1 (16 ounce) package baby portobello mushrooms
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup shredded mozzarella cheese
  • 3 green onions, finely chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and generously grease a shallow 2-quart baking dish.
  • Separate mushroom caps from stems. Dice stems finely, then mix with Parmesan, mozzarella, green onions, olive oil, garlic, salt, and black pepper. Fill mushroom caps generously with the mixture and place in baking dish.
  • Roast in the oven until mushrooms are tender, about 10-15 minutes.
