Spicy Bolognese sauce with flavorful merguez sausage, customizable for all taste preferences.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 ounce pancetta, cut into 1/4-inch dice
  • 1 carrot, peeled and cut into 1/4-inch dice
  • 1 small yellow onion, cut into 1/4-inch dice
  • 1 stalk celery, cut into 1/4-inch dice
  • 0.5 pound ground beef
  • 0.5 pound merguez sausage, casings removed
  • 0.5 cup Chianti wine
  • 4 ounces tomato paste
  • 0.5 cup whole milk, or as needed
Instructions:
  • 1. Simmer oil in a medium Dutch oven over medium heat. Add pancetta and cook, stirring often, until fat has rendered for 10 to 12 minutes. Add carrot, onion, and celery, then season with salt and pepper. Cook until vegetables are soft and lightly browned, about 10 minutes.
  • Cook a mixture of ground beef and merguez sausage on medium-high heat, stirring to crumble the meat, until it turns brown, which should take about 12 to 15 minutes. Remove any excess fat as required.
  • Pour in elegant Chianti and simmer until liquid is nearly gone. Lower heat to medium, mix in tomato paste, and cook until sauce deepens to a rich red hue, about 3 to 5 minutes. Pour in just enough milk to cloak the meat. Simmer and stir occasionally until milk evaporates, transforming the mixture into a velvety, luxurious sauce, around 1 to 1 1/2 hours. Season with salt and pepper to taste.
