Spicy or mild Mexican baked fish served with rice, black beans, tortillas, and margaritas - a festive meal for any occasion!
Ingredients:
  • 1.5 pounds cod
  • 1 cup salsa
  • 1 cup shredded sharp Cheddar cheese
  • 0.5 cup coarsely crushed corn chips
  • 1 avocado - peeled, pitted and sliced
  • 0.25 cup sour cream
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and lightly grease a 8x12 inch baking dish.
  • After a quick rinse and pat dry, arrange the fish fillets in a baking dish. Cover with zesty salsa, sprinkle generously with shredded cheese, and finish with a crunchy layer of crushed corn chips.
  • Uncover and bake in the preheated oven for 15 minutes until the fish is opaque and flakes easily with a fork. Top with sliced avocado and sour cream before serving.
