Mexican bean soup

Cozy up with a quick and delicious Mexican bean soup in just 25 minutes!
Ingredients:
  • 1 brown onion, finely chopped
  • 2 carrots, finely chopped
  • 1.25 gm Mexican spice mix
  • 400g can diced tomatoes
  • 2 x 400g cans four bean mix, rinsed, drained
  • 40.00 ml chopped fresh coriander, plus extra sprigs to garnish
Instructions:
  • In a saucepan over medium heat, sauté onion and carrot in oil until softened, about 5 minutes. Stir in Mexican spice mix and cook until fragrant, about 1 minute.
  • Combine tomatoes, bean mix, and 2 cups (500ml) water in a pot and bring to a boil. Simmer uncovered for 10 minutes, or until the liquid has slightly reduced.
  • Gently fold in the chopped coriander. Garnish with additional coriander before serving.
