Whip up a quick and flavorful Mexican Black Bean Soup in 20 minutes! Tangy lime, zesty salsa, crumbly queso fresco, and fresh cilantro give this meatless dish a delicious twist.
Ingredients:
  • 2 cans (15 oz each) Progresso™ black beans, drained, rinsed
  • 1 1/2 cups vegetable broth
  • 1/2 cup refrigerated fresh salsa
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chopped chipotle chile in adobo sauce (from 7-oz can)
  • 1/2 teaspoon ground cumin
  • 2 tablespoons chopped fresh cilantro
  • 1/3 cup crumbled queso fresco cheese
  • 4 lime wedges
Instructions:
  • In a 2-quart saucepan, gently mash the beans with a potato masher. Add broth, salsa, lime juice, chile, and cumin. Bring to a boil, then lower the heat and simmer uncovered for 5 minutes until heated through. Remove from heat and stir in cilantro.
  • Sprinkle each serving with cheese and garnish with lime wedges before serving.
