Flavorful broth simmered with sautéed onion, green pepper, white rice, and black beans - a delicious and satisfying side dish!
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup uncooked regular long-grain white rice
  • 1 medium onion, diced
  • 1 medium green pepper, diced
  • 3 cups Swanson® Mexican Tortilla Flavor Infused Broth
  • 2 tablespoons tomato paste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.25 cup chopped fresh cilantro leaves
Instructions:
  • In a 6-quart saucepot, heat oil over medium-high heat. Add rice, onion, and pepper, and stir-fry for 2 minutes.
  • Combine the broth and tomato paste in a pot and bring to a boil. Lower the heat, cover, and simmer for 15 minutes until the rice is tender. Add in the beans and cilantro, if desired, and continue cooking until everything is heated through.
