Mexican beef and salsa party pies with corn, japapeño and feta

Elevate your party with savory beef and salsa pies topped with zesty Mexican street corn salad.
Ingredients:
  • 2 corncobs, husk and silk removed
  • 1⁄2 green capsicum, deseeded, finely chopped
  • 2 green shallots, thinly sliced
  • 20.00 ml pickled jalapeños, finely chopped
  • 1⁄2 lime, juiced
  • 25g smooth feta, crumbled
  • 24 Patties Party Pies Mexican Beef & Salsa
  • Sour cream, to serve
  • Smoked paprika, to serve
  • Baby coriander leaves, to serve
Instructions:
  • Heat a chargrill or barbecue grill over medium-high heat. Coat the corn with oil and grill for 12-15 minutes until tender and lightly charred. Set aside to cool before removing and cutting off the kernels.
  • Mix together the corn, capsicum, shallot, jalapeños, lime juice, and feta in a bowl. Season with your favorite spices and toss everything together until well combined.
  • Make the Patties Party Pies according to the instructions on the packet.
  • Place the pies elegantly on a platter, add a generous dollop of sour cream, a sprinkle of paprika, the corn mixture, and fresh coriander for a burst of flavor.
