Cheese-crusted taco pockets with savory beef, fresh spinach, and zesty salsa - a unique and mouthwatering taco variation.
Ingredients:
  • 500g beef mince
  • 405g pkt Soft Taco Kit
  • 400g (5 cups) grated pizza cheese
  • 150g baby spinach leaves
  • Sour cream, to serve
  • Finely chopped chives, to serve (optional)
Instructions:
  • In a medium non-stick frying pan over medium-high heat, heat half of the oil. Cook beef, breaking it up with a wooden spoon, for 5 minutes until browned. Stir in spice mix from kit and 1/2 cup water. Cook for an additional 3-4 minutes until thickened. Transfer beef mixture to a heatproof bowl and cover to keep warm. Clean pan.
  • In the same pan, heat the rest of the oil over medium heat. Sprinkle 1/2 cup of cheese to create a 15cm circle in the pan (slightly larger than the tortillas). Cook for 1 minute until the cheese edges turn golden. Place a tortilla from the kit on top of the cheese and cook for another 30 seconds until the cheese edges are golden.
  • Gently transfer the cheese-filled tortilla from the pan onto a heatproof plate, with the cheese side facing up. Allow it to cool for 30 seconds. Shape the tortilla into a taco and place it between two cups to set for 5 minutes until it holds its shape. Repeat the process with the rest of the cheese and tortillas.
  • Fill tortillas with a flavorful mixture of spinach and beef. Top with zesty salsa, dollops of creamy sour cream, and a sprinkle of fresh chives, if desired. Serve and enjoy!
