Delicious skillet pizza with cheese crust topped with more cheese, tomatoes, and basil for a gluten-free and grain-free option!
Ingredients:
  • 1.5 cups shredded part-skim mozzarella cheese
  • 5 cherry tomatoes, thinly sliced
  • 2 tablespoons torn fresh basil leaves
  • 4 small fresh mozzarella balls (bocconcini), thinly sliced
Instructions:
  • Preheat a 10-inch non-stick skillet over medium-high heat. Spread shredded mozzarella evenly in the skillet and cook until melted, about 2 to 3 minutes.
  • Layer tomato slices, basil leaves, and fresh mozzarella on the melted cheese, ensuring space for a "crust" to develop. Cook until the top is bubbling and the edges are golden brown, approximately 2 to 3 minutes.
  • Take the skillet off the heat and use a spatula to free the pizza. Transfer the pizza to a cutting board and allow it to cool for 1 minute before cutting.
