Delicious cheesy chickpeas perfect as a side or solo with crusty bread.
Ingredients:
  • 1 small onion, sliced into petals
  • 0.5 teaspoon Italian seasoning
  • 2 (15 ounce) cans chickpeas
  • 1 (24 ounce) jar chunky marinara sauce (such as Barilla®)
  • salt and freshly ground black pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1 (2.25 ounce) can sliced ripe olives, drained
  • 1 teaspoon chopped fresh oregano
Instructions:
  • In a large skillet over medium-high heat, heat oil. Cook onion until soft and translucent, about 4 minutes. Stir in garlic and Italian seasoning, cook for an additional minute.
  • Drain one can of chickpeas and reserve the liquid from the second can. Combine all chickpeas, liquid from one can, and marinara sauce in a skillet. Season with salt and pepper. Simmer over medium-low heat for 8 minutes.
  • Position the oven rack 6 inches below the heat source and preheat the broiler on high heat.
  • Spread the chickpea mixture in an ovenproof skillet, then generously top it with mozzarella cheese and olives.
  • Broil the skillet in the oven until the cheese is melted and slightly browned, for about 5 minutes. Top with fresh chopped oregano and serve right away.
