Cheesy Skillet baked meatballs recipe

Delicious meatballs ready in under an hour. Be prepared to devour them quickly!
Ingredients:
  • 500g No Added Hormones Beef Mince
  • 1 Free Range Egg
  • 70g breadcrumbs
  • 1 brown onion, coarsely grated
  • 2 tsp finely chopped rosemary
  • 7.50 gm smoked paprika
  • 1 brown onion, extra, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 125ml red wine
  • 250ml sugo
  • 80ml thickened cream
  • 60g pkt Baby Spinach
  • 50g mozzarella
  • 125.00 ml basil leaves
  • 1 garlic clove, crushed
  • 80ml olive oil
Instructions:
  • Combine the mince, egg, breadcrumbs, grated onion, rosemary, 1 clove of garlic, and 1 1/2 tsp paprika in a large bowl. Mix thoroughly to blend flavors. Season to taste.
  • Prepare a baking tray with parchment paper. Roll 1-tablespoon portions of the mixture into balls and place them on the tray. Chill in the fridge for 15 minutes.
  • 1. Preheat the oven to 180°C. Meanwhile, in a large ovenproof frying pan, heat half of the oil over medium-high heat. Add the meatballs and cook for 5 minutes, turning occasionally, until they are browned all over. Remove the meatballs and transfer them to a plate.
  • Heat the rest of the oil in the pan. Saute the onion, carrot, celery, and the last clove of garlic along with the remaining 1 1/2 tsp paprika. Cook, stirring, for 5 minutes until the onion softens. Add wine or stock, bring to a simmer, and cook for another minute until the liquid reduces slightly. Add diced tomato, sugo or passata, and cream. Mix well and bring to a simmer. Season, stir in the spinach, and remove from heat.
  • Place the meatballs on top of the tomato mixture, then generously sprinkle with mozzarella. Bake for 20-25 minutes, or until the meatballs are golden brown and the sauce thickens slightly. Allow to cool slightly before serving.
  • Create a fragrant basil oil by blending fresh basil, garlic, and oil until smooth. Drizzle this aromatic mixture over the meatballs.
