Cheesy skillet cornbread with onions, corn, and bacon drippings for ultimate flavor and warmth.
Ingredients:
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 cup shredded medium or sharp cheddar cheese
  • 1/4 cup chopped onion
  • 1 cup milk
  • 3 tablespoons bacon drippings (warmed to liquid), plus 1 teaspoon to grease the pan
  • 1 large egg, beaten
  • 3/4 cup of cooked corn, either fresh, defrosted frozen corn, or drained from a can
Instructions:
  • Preheat a 9 or 10-inch cast iron pan in the oven at 350°F.
  • Prepare the batter: Combine cornmeal, flour, baking powder, sugar, garlic powder, and salt in a large bowl. Mix in the remaining ingredients until just combined.
  • Prepare the hot pan: Take the hot pan out of the oven (be cautious, the handle can get hot!). Add a teaspoon of bacon fat to the pan and swirl it around until it melts and covers the bottom evenly. Pour the batter from the mixing bowl into the pan, use a pot holder to hold the hot handle, then place it back into the oven.
  • Bake the cornbread at 350°F for 40 minutes or until golden brown. Allow it to cool in the pan. To cool down the hot handle, rub an ice cube over it before attempting to move the pan. Enjoy! If you loved the recipe, please leave us a rating below!
