Delicious one-skillet tamale casserole with savory ground beef, tomato layers, topped with cheesy cornbread.
Ingredients:
  • 1 pound ground beef
  • 0.5 teaspoon ground black pepper
  • 1 small onion, chopped
  • 2 (15 ounce) cans pinto beans, rinsed and drained
  • 2 (15 ounce) cans crushed tomatoes
  • 1 (15 ounce) can cream-style corn
  • 1 (6 ounce) box cornbread mix
  • 1 large egg, lightly beaten
  • 1 cup shredded Cheddar cheese
Instructions:
  • Prep all ingredients while preheating the oven to 400°F (200°C).
  • Preheat a cast iron skillet over medium-high heat. Brown ground beef until crumbled and cooked through, about 5-7 minutes. Drain any excess grease. Season with salt and black pepper.
  • Sautee onions with ground beef over medium heat for 1 minute. Remove skillet from heat and mix in pinto beans and crushed tomatoes.
  • Combine the cream-style corn, cornbread mix, and egg in a large bowl until creamy. Spread over the ground beef mixture in the skillet, then top with Cheddar cheese.
  • Bake in the preheated oven for about 25 minutes until the cheese is melted and the cornbread is set in the middle.
