Flavorful Southwestern tamale pie, perfect for a cozy weeknight meal.
Ingredients:
  • 1 tablespoon butter
  • 0.5 pound ground beef
  • 0.5 cup chopped onion
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can diced tomatoes
  • 0.25 cup vegetable oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup milk
  • 0.5 cup yellow cornmeal
  • 1 (6 ounce) can black olives, drained
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter an 8-inch baking dish.
  • Preheat a large skillet over medium-high heat. Brown the ground beef and onion until the beef is crumbly. Add corn, tomatoes, oil, chili powder, and cumin. Bring to a boil and then remove from heat.
  • In a large bowl, mix together milk, cornmeal, and eggs. Add the meat mixture and stir to combine. Gently fold in the olives before pouring the mixture into the baking dish.
  • Bake in the preheated oven for 50-60 minutes until golden and fully set, ensuring the mixture is not mushy.
