Mexican beef meatballs

Kid-friendly Mexican beef meatballs.
Ingredients:
  • 500g lean beef mince
  • 2 x 125g cans red kidney beans, drained, rinsed
  • 1 small red onion, chopped
  • 40.00 ml fresh flat-leaf parsley leaves
  • 187.50 ml chunky mild tomato salsa
  • 18.20 gm olive oil
  • 1 medium avocado, halved, peeled
  • 37.60 gm reduced-fat sour cream
  • Salad, to serve
Instructions:
  • In a food processor, blend together the minced meat, beans, onion, parsley, and 1/2 cup of salsa until mixed. Shape small balls using about a tablespoon of the mixture. Set them on a plate. Preheat your oven to 180°C (160°C fan-forced) and prepare a large baking tray with parchment paper.
  • In a sizzling frying pan, brown meatballs in batches until golden all over. Then, bake on a prepared tray for 10 minutes until fully cooked.
  • Mash avocado in a bowl using a fork, then mix in sour cream. Serve with meatballs, salad, and the remaining salsa.
