Whip up delicious albondigas soup with meatballs in savory beef broth with carrots and potatoes.
Ingredients:
  • 1 quart water
  • 4 carrots, sliced
  • 2 small potatoes, peeled and diced
  • 1 medium onion, diced
  • 1.5 cups salsa, medium or hot
  • 2 beef bouillon cubes
  • 1.5 pounds ground beef
  • 0.33333334326744 cup seasoned dry bread crumbs
  • 0.33333334326744 cup milk
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • In a large stockpot, combine water, carrots, potatoes, onion, salsa, and bouillon cubes and bring to a boil. Simmer over medium heat for 10 minutes, stirring occasionally.
  • Combine the beef, bread crumbs, and milk in a bowl.
  • Roll the mixture into 1-inch meatballs and gently place them into the flavorful broth. Allow the soup to reach a boil, then lower the heat to medium-low.
  • Cook the meatballs until they are fully cooked in the center and the vegetables are tender, approximately 20 minutes.
  • Sprinkle with fragrant fresh cilantro.
